Huelva: Atlantic seafood and Iberian cured ham
Huelva's cuisine is a reflection of the city's history and geography. Devoted to culinary arts, Huelva will offer a delicious fare that will pleasantly surprise the most demanding gourmets. Fish and seafood are the staples of Huelva's cuisine and they are of such exceptional quality that it is said that they can be easily told apart from those of nearby places. Prawns are captured in the river mouth and deep-water pink shrimp in the coast, the latter being unmistakable because of the rosy colour that tints their backs when they are cooked. To these two wonderful delicacies we must add other excellent sea products, like lobster, Norway lobster and coquina clam, a must for anyone who visits the province. Fish can be prepared on the grill, fried, or made into a variety of stews, like cuttlefish with potatoes or cuttlefish with fresh beans. Tuna, snapper, sea-bass, sole and red mullet are some of the species caught in the coast of Huelva, from Ayamonte to Punta Umbría.
